Food processing lab
This laboratory supports the development of new food products. The services range from product design to prototyping and production of the “new” industrial product. All necessary chemical, physical and microbiological analyses to establish compliance with current legislation are included within the services. Processes for the fermentation of biomass from various sources can also be conducted in the laboratory.
Technological equipment
The equipment used for the laboratory activities includes:
- low-impact treatment systems: an ohmic system with aseptic filling and a high hydrostatic pressure system;
- Fermentation systems for small volumes from 1 to 3 litres and larger volumes from 10 to 30 litres, and other accessory equipment;
- Facilities for brewery products: An Anton-Paar beer analysing system, consisting of the Alcolyzer Beer Plus for evaluation of the percentage alcohol content by weight and volume, the relative density of the water-alcohol solution, colour, pH, relative density of the beer, relative density of the extract, percentage of real extract by weight, percentage of apparent abstract by weight, percentage of original extract by weight, real degree of fermentation, apparent degree of fermentation, and a carbonation measurement module for determining CO2; Nibem Haffmans Foam Stability Tester for measurement of foam stability in beer; NIR spectroscopy for multi-parametric analysis of malt and barley for use in brewing.
- Facilities for the production of bread, pasta and bakery products; packaging machines; analytical support instruments: dynamometer, rheometer, alveograph, consistograph, glutomatic system, falling number, colorimeter, NIR, water activity analyser, temperature and relative humidity data logger.
